ST. PATTIES DAY

I love holidays! (any reason to do something out of the norm) I like dressing my kids for the occasion. Red/pink valentine's shirts on Valentines, Patriotic get up of the 4th of July, etc. -And St. Patricks Day is no exception. We will be eating green food, wearing green clothes, and drinkng something green. My friend gave me THE LEGEND OF THE LEPRECHAUNS. I thought it was so cute! My kids will love it! Will the Leprechauns be coming to your house???

This St. Patrick's Day, let your child in on a well-guarded secret and start a new family tradition in the process. The fun begins with the legend of the leprechauns and leads to a treasure box filled with goodies and gifts. Here's what to do. On the day before the holiday, read aloud the following tale:

LEGEND OF THE LEPRECHAUNS
Full of magic and trickery, the leprechauns remain in their hidden world until the night before St. Patrick's Day. On that one night of the year they appear throughout the world to dance and sing and frolic.

Disguising themselves as leaves and grass, and sounding like the wind and the crickets, they come and go unnoticed.

However, it is said that if a decorated treasure box is left empty under the moon, the leprechauns must fill the box with gold or jewels or gifts. But then they will hide the filled box in the most unlikely of places.

If the box is found on St. Patrick's Day, the treasure remains in our world. If not, the leprechauns may retrieve what is rightfully theirs. And though the leprechauns are very clever, it is not impossible to find the treasure because, unknowingly, leprechauns often leave a trail of greenery behind them.

MAKING THE TREASURE BOX
Now, have your child decorate an empty shoe box or tissue box with paints, glitter glue or stickers. If she tries to bargain for a bigger box, explain that leprechauns are tiny and if they can't reach the top of the box, it will remain empty. Just before bed, she should place the finished box on a windowsill where the moon will shine on it.

Once she's sound asleep, the resident leprechauns can fill the box with small treasures, such as foil-covered chocolate coins, costume jewelry or a bag of marbles, and then hide it in a special place. All that's left to do is lay a trail of green leaves or paper shamrocks from the windowsill to the box. An older child may even enjoy the challenge of several trails to follow, some with dead ends (you know, trickery of the leprechauns!).

Is this the style?


K.C. loves his hair in a MOHAWK. He thinks he looks so cool! He begs me every morning to comb his hair in a MOHAWK. The higher the better. I think he is cute no matter how his hair is combed, but he seems to disagree. I picked my battles and this is not one of them:)

I love, love Mexican Food!!

I made these the other night to go along with our fajitas, and YUM!

STRAWBERRY ENCHILADAS
(note: insead of flour tortillas I used the fresh uncooked tortillas and grilled them before I put the filling in them. And... instead of the sauce I just topped the cooked enchilada's with sliced strawberries and sugar, oh and I also put some sliced strawberries in the filling. They were really really good-even my brother liked them and he doesn't like anything!!! Love ya Brax:))

Flour tortillas

FILLING:
8 ounces cream cheese
1/4 cup sour cream
1 teaspoon vanilla
1/2 cup powdered sugar

STRAWBERRY SAUCE:
1 tablespoon butter
1/4 cup fresh orange juice
1/2 to 3/4 cup sugar
1/4 teaspoon salt
3/4 cup pureed fresh strawberries
2 cups sliced strawberries

INSTRUCTIONS: To prepare the filling: Combine the cream cheese, sour cream, vanilla and powdered sugar in the bowl of a mixer; beat until fluffy. Set aside.

To prepare the sauce: Combine the butter, orange juice, sugar, salt and pureed strawberries in a 3-quart saucepan. Add sliced strawberries.

Bake the enchiladas in a preheated 350 degrees oven for 8 to 10 minutes, or until the filling is puffed.

Kell did the Dixie High Cheer Clinic this past week. She had so much fun with Maesi & Carly. They performed at the Dixie basketball game on Friday, It was soooo cute! She has decided that she wants to be a cheer leader when she grows up-oh, and a cooker:)

Happy Birthday!


Today is my dads birthday. My dad is the most generous, kind, fun loving, and awesome man I know. He is always up for a good adventure. Whether it is snowmobilling; 4-wheelering; camping; hunting; or his new love, riding his Harley. He always makes the most of any situation. In fact for the first couple of years me and Kevin were married I would worry when they were together. They had quite a few near death experiences together because of the stupid stuff they would do:)
Not only is he the best dad in the world he is also the best grandpa in the world-or mabey even universe(seriously)!!! All of the grandkids adore him. He is always having then over for sleepovers, going to movies, taking them for treats, playing cards, putting puzzles together, wrestling, reading stories, whatever he can do to make them smile. He will watch my kids for me at any given moment, and not because I asked him to, but because HE WANTS TO. Dad you is the best. We love you! xoxoxo

9th Anniversary


We met in Middle School when we moved 3 houses down from his family. We were friends all throughout middle school and high school. We started dating our Junior Year. We were married January 16th 1999. And as they say, the rest in history. We have had an enjoyable nine years together, and have made tons of memories. Some that stick out in my mind: Snowmobilling in Yellowstone; Building our first house; Parasailing in Puerta Vallarta (Kevin missing his flight home from Mexico); golf ball diving; lots and lots of camping trips; playing Canasta; midnight sledding at the cabin; shooting my first elk, turkey, and deer; going on Cruises together; Giving birth to our four kids; taking the kids to Disneyland; and many many more! I love ya babe, and look forward to many many many more!!!

HAPPY NEW YEAR!

 

We spent New Years Eve at Brandon & Malea's with a bunch of friends. We ate, played Guitar Hero, ate, played Wii, ate, and then ate some more. It was alot of fun, and the kids had a ball.
